Homemade French Baguettes

Fresh baked baguettes

Ingredients

  • 3½ cups all-purpose flour
  • 1¼ cups water
  • 1 tsp salt
  • 1 tsp instant yeast

Instructions

  1. Mix ingredients and rest 15 minutes.
  2. Perform three stretch-and-fold sets over 1½ hours.
  3. Refrigerate overnight (12–14 hours).
  4. Divide dough into three pieces and shape.
  5. Roll to approximately 14–15 inches.
  6. Proof 30–60 minutes.
  7. Preheat oven to 500°F with steam pan.
  8. Bake at 425°F for about 23 minutes until golden brown.
